The role Breakfast Cook
You are the start of the day at Bouillon. You prepare fresh breakfast dishes, croissants, and maintain the buffet with the same attention as a dinner.
Early birds with a sense of taste and hospitality: the city starts well with you.
Responsibilities
Breakfast preparation & service: preparing egg dishes (à la minute), viennoiserie baking and finishing, toast/baguettes, salads, and small cold/hot dishes buffet style.
Refilling and maintaining the buffet, slicing and preparing toppings, quick turnover for to-go orders.
Morning mise-en-place: starting the day according to a checklist; setting up breakfast and preparing components for lunch service.
Hygiene & safety: strict compliance with HACCP; temperature recording (cooling/warm holders), FIFO labeling, and cleaning rounds; equipment clean and safe.
Stock & orders: daily counts and reordering breakfast products (bread, dairy, eggs, charcuterie, spreads) in coordination with the (Sous)Chef.
Collaboration with FOH/bar: coordination with baristas and service staff for timing peak moments; processing guest requests and dietary requirements correctly.
Handover to the lunch team: clear shift notes, remaining production status, and priorities for the next brigade.
Profile
Experience as Breakfast Cook, All-round cook, or (Demi) Chef de Partie with a strong morning routine.
Organized: works clean, structured, and independently; maintains an overview in the early rush.
Clear communication (Dutch and/or English) and service-oriented in collaboration with FOH/bar.
HACCP knowledge and consistent application of hygiene and safety standards.
Early bird: available for early shifts, including weekends and holidays.
